If we translate Italian logic to Spanish gastronomy, paella a domicilio should be our equivalent of risotto to go. But, in practice, it is more like ordering pizza: a cardboard box hides an iconic dish that is best enjoyed when shared.
In Madrid there are those who have dared to perfect the concept. In Valdebebas, in the district of Hortaleza, we find Balear, a rice restaurant with a clear Levantine inspiration, with a menu that is not limited to traditional paella.
More than a rice restaurant
As gastronomic critic José Carlos Capel said: Balear’ s success is that it is much more than a simple rice restaurant. Not only do they excel in rice -like that classic Valencian paella that looks like it was just brought from Valencia by Hyperloop-, but they have made their Russian salad a cult dish.
Not in vain, they won the award for Best Russian Salad of the Community of Madrid in 2022, with a recipe that replaces boiled potatoes with roasted potatoes and is dressed with homemade mayonnaise, anchovies, piparras and seasoned gordal olives from Talavera de la Reina.
The architect of this project is Jorge Baeza Manzaneque, who is also in charge of Balear, an establishment with a philosophy and name that evoke the Mediterranean spirit. Here, the concept of Mediterranean cuisine, tapas and portions is successfully transferred to the table, betting on quality ingredients and impeccable execution.
A delivery that works
In addition to the ensaladilla (14 euros), its potato omelette stands out, which has been awarded in ACYRE 2024 and costs 25 euros, and the Valencian paella with chicken, garrofó and vegetables, priced at 46 euros for two people and 88 euros for four. Of course, you have to leave a deposit of 5 euros.
In short, Balear proves that yes, paella at home is a challenge. But, with the right hands, it can be a success.
