
A few days before the celebration of Tortilla Day -this coming Sunday, March 9- the Association of Chefs and Pastry Chefs of Madrid (ACYRE) has announced the brand new winner of its contest for the best tortilla in Madrid 2025. The prize, without further ado, has gone to the Rastro and has been taken by the chef Simón García, from La Tortilla Castiza (Calle Ribera de Curtidores, 26 – Local 16).
The final, to which eight aspirants -Simón García from La Tortilla Castiza, Txema Larrañaga from Pintxolari, Javier Alfaro from Bestial by Rosi la Loca, Victoria Maseda from Masseda Catering, Freddie Realista from Triana, Miguel Ángel Aleixandre from Casa Salesas, Cecilia Malán from Etiqueta Negra and Iván Plademunt from Plademunt- has left the following podium:
- First prize: Simón García of La Tortilla Castiza.
- Second prize: Iván Plademunt of Plademunt – El restaurante imaginario (calle de Frncisco Díaz, 1. Alcalá de Henares).
- Third prize: Cecilia Malán of Etiqueta Negra (calle de Lombía, 5).

The contest, held last Tuesday at the Center for Gastronomic Innovation of the Community of Madrid, has as its main objective “to encourage citizens to enjoy the recipes in our bars and restaurants” and “to value the talent that exists among the cooks in Madrid“, in the words of Nino Redruello, president of the tasting jury of the ACYRE contest.
How is the best omelette of Madrid 2025 made?

García says that his goal is “to make potato omelets that could have Madrid’s designation of origin” and highlights as main characteristics that they are juicy, creamy and tasty. To make them, of course, he uses eggs from Granjas Villarreal and LOA 77 olive oil with the Madrid Calidad seal.
The trick, he says “is to make it in a very artisanal way, as if it were homemade“. To do this, they fry the potato in olive pomace oil – which has a milder flavor and tolerates higher temperatures – and to curdle it, they use what he calls “our liquid gold”: Madrid’s extra virgin olive oil.
Prices

From Wednesday to Saturday you can order La Tortilla Castiza’s tortillas through its website to have them delivered to your home or to pick them up at the restaurant. On Sundays, Rastro days, they encourage you to visit the place to know their creative pinchos bar and, of course, the tortillas: from traditional to truffle, octopus a feira or Leon chorizo and Manchego cheese.
As for prices, they vary according to their two sizes:
- Tortilla castiza complete (between 3-4 good portions): from 11,95€.
- Large tortillón castizo (between 5-6 cheerful pinchitos): from 15,95€.
