Cinnamon comes from Sri Lanka and apples come from Kazakhstan… and yet their union is almost a culinary miracle. A demonstration of bobbin lace and voluntary or random coincidences such as the one that will occur on October 15 between Peru (and Southeast Asia) and Italy. A day on which a strange question will be answered: How is it possible that many of these flavor combinations have never been tasted?
Bel Mondo and its executive chef Daniele Tasso will host Roberto Martinez (owner of best market restaurant in Madrid and Triperito) to offer an unprecedented, ephemeral and unusual menu. They have spent days working together to give rise to eight passes that blend experience, technique and flavors from one side and the other.
The process of creating the menu, which has received the name of Fuori di testa, is defined by the chef of Bel Mondo in statements to Madrid Secreto: “it has been very natural: we have been looking for fresh products, citrus, spicy and with each dish we have mixed the techniques of both”.
What dishes make up the menu?
In this way there is a meritorious circumstance: the result are dishes in which you recognize what each one has contributed and that do not clash with each other. After tasting them, we can say that they are harmonious, balanced and complex dishes. One proof is the addictive montarina: a fried bread with gazpachuelo acevichado sauce, red tuna and stracciatella.
Other examples of this case is the Killer Pasta anticuchada. It’s a spaghetti all’assassina (viral recipe that consists of finishing the pasta in the pan) washed down with a spicy aji panca bell pepper sauce and San Marzano tomato and topped with a leg of octopus al Jósper. Possibly the most memorable dish on the menu.
More dishes: the oyster with leche de tigre, basil and balsamic vinegar granita; the artichoke allá romana stuffed with a Peruvian stew with pata de cero; or the bao with meatballs; or the reversion of the causa limeña.
The menu, we said, is made up of a total of eight dishes (dessert included) and there is the option of adding a limoncello sour for an additional €10.5.
