On the evening of Tuesday, November 26, the Michelin Guide 2025 gala brought a torrent of emotions to the Spanish gastronomic scene, marked by solidarity with the victims of the tragic DANA. Between tributes, the evening witnessed a milestone: 45 new Michelin stars spread across Spain, accompanied by 9 new Green Stars, the sustainability label that rewards commitment to the environment.
Madrid expanded its constellation with five new restaurants recognized with a Michelin star. Among them, Pabú, Sen Omakase (which we recommended the other day in our list of restaurants with omakase menu), Velascoabellà, Gofio (which recovers its star after losing it last year) and the intimate Chispa Bistró, which burst with force in a list where Diverxo, the jewel of Dabiz Muñoz, continues to reign as the only three stars in the capital.
In parallel, two illustrious names said goodbye to their star: El Club Allard, after the departure of the illustrious Martín Berasategui, and Zuara Sushi, which recently announced the move to a new location.
The Green Star and solidarity
Sustainability also shone at the gala, with the inclusion of DSTAgE and Tramo among the Madrid restaurants awarded the coveted Green Star. A recognition that reflects the growing interest in a more conscious and environmentally friendly gastronomy. The two restaurants (DSTAgE, by the way, has another two stars) join a list that already included Coque and El Invernadero.
On a night in which the victims of the DANA were remembered, Madrid demonstrated, once again, that its table is a space where tradition and innovation meet, and where the culinary future of Spain is still being cooked.
