Madrid vindicates its most traditional cuisine every November through a product that, for years, was despised and today is exhibited in signature menus and neighborhood bars. The Casquería Route celebrates its fifth edition in 2025, consolidated as an essential event for those who know that the culinary identity of Madrid cannot be understood without tripe, entresijos or gallinejas.
From November 7 to 30, about forty restaurants throughout the Community of Madrid will join this initiative organized by Alberto de Prado Ilzarbe, director of Qué Rico España, with the support of Casquerías Óscar, a family business that has been promoting this tradition for 90 years. The route goes from centenary taverns to signature cuisine spaces, including for the first time proposals with Ecuadorian, Peruvian and Mexican roots.
From popular kitchens to starred restaurants
This edition emphasizes diversity: each participating restaurant offers a dish and a tapa specially created for the occasion, in a range of styles from the most traditional zarajos to haute cuisine elaborations. The chef Javier Estévez, undisputed reference in the reinterpretation of casquería, joins again with his restaurant La Tasquería, which boasts a Michelin star and two Repsol Suns.
Among the classics that do not fail are Casa Enriqueta, El Lince, La Bola or the historic Taberna Antonio Sánchez, founded in 1787. In the latter, in addition to its iconic Madrid-style tripe with potato omelette, you will be able to taste an exclusive recipe created for this route: pig’s trotters stuffed with guanciale.
Parallel activities, prizes and citizen participation
The fifth edition will not only be experienced at the table. There will also be showcookings by chef Ramón Martín, from his new cooking school Lumbre, and the culinary popularizer David Luengo, author of Cocinando en Guadarrama. In addition, there will be raffles, contests and traditional and innovative cooking workshops.
Public participation is also key: each diner will be able to vote for his or her favorite dish or tapa on the official website of the event, attaching the restaurant’s ticket. Among the prizes: meals in restaurants along the route, lots of DAPSA products and exclusive gastronomic experiences. The votes will determine the winners of the following categories:

- Best Casquería Tapa
- Most Creative Dish and Tapa
- Best Latin Dish and Tapa
- Best Tripe
A route with a Casquería soul and an international outlook
The Route of the Casquería 2025 extends throughout the region: from Lavapiés to Getafe, passing through Guadarrama, Aranjuez, Alcalá de Henares or San Lorenzo de El Escorial. This diverse geography reflects the integrating character of a cuisine that has been able to renew itself without losing its roots.
Restaurants such as Plademunt, Doña Marthita, Bongonancy, Xamach or La Venganza de Malinche, which incorporate Latin American flavors to the repertoire of Madrid’s casquería.
