After years of seeing patients and hearing them ask where to go for a balanced lunch or breakfast, nutritionist Rocío del Sol has decided to make the leap into the restaurant business. Her venture is Del Sol, a new restaurant in Chamberí designed on the premise that eating healthy doesn’t mean ordering only boring salads.
Dressings and spices versus monotonous diets
Located at 4 Galileo Street, the restaurant begins its day by serving breakfast accompanied by specialty coffee. Starting at 1:00 p.m., the restaurant unveils its main offering: on a table, a variety of dishes are made available to customers, and each person designs their own plate by choosing a protein—meat, fish, or plant-based—and one or two side dishes featuring carbohydrates, vegetables, or salads.
“We’ve managed to create healthy food that’s well-balanced in terms of dressings, spices, and herbs so that the flavor is absolutely delicious,” explains del Sol. Some of the dishes offered at the restaurant include Persian jeweled rice, which stands out for its sweet notes and Moorish spices; bimi with peanut sauce; Greek salad; and crispy sweet potatoes. They also offer lighter options such as cream of pumpkin soup or combinations of beets, yogurt, and fruit.
Furthermore, Del Sol places great emphasis on cleanliness and the quality of its ingredients, and all dishes are prepared fresh daily. This can be a relief for pregnant women who, in many cases, face uncertainty when eating out because they can’t be sure that the food has been handled safely.
The entire menu can be enjoyed in the restaurant’s dining room or ordered as takeout. Pre-packaged meals can be a practical solution for those who prefer to pick up their lunch and eat outdoors before getting back to their daily routine.
