The good news for the rest of us is that his cuisine can be sampled at the neighborhood restaurant itself for an average bill of around 20 euros if you choose wisely.
Aldo Sebastianelli is an Argentine chef based in Madrid who, together with his partner Jorge Calen, has turned Gustoo into one of the most talked-about spots in Chueca thanks to a creative, personal cuisine free of the rigidity of classic haute cuisine. His style blends technique and ease with dishes designed for sharing, nods to Latin America, playful use of sauces and grilled flavors, and a frequently changing menu—more typical of a contemporary bistro than a stuffy restaurant.
The private dinner: six creative dishes and a truffle-stuffed bikini
According to El País, the chef at Gustoo will serve a six-course creative tasting menu for the Puerto Rican’s private dinner, followed by a late-night snack capped off with a truffle-stuffed bikini, one of the chef’s signature bites. The full menu has not been released, but it has been revealed that it will feature a selection of highlights from his cuisine: small, flavorful bites, playful textures, and that touch of elevated comfort food that’s perfect after two hours on stage.
The idea is to offer something that works for an artist and their entourage after a concert: dishes designed to be eaten with relative ease, a brisk pace of service, and a balance between world cuisine, nods to Spanish ingredients, and a few sweet treats.
Gustoo: a market-style restaurant
Gustoo is located in the San Antón Market (Chueca). It’s a small spot with just a few tables and an open kitchen counter that doesn’t take reservations, where the dining experience is built around full and half portions meant for sharing, rather than the traditional starter-main-dessert format.
Eating for less than 20 euros is feasible if you adjust your order: by sharing one or two dishes between two people, choosing simpler options from the menu (croquettes, a vegetable dish, pasta, or the daily rice special), and limiting drinks, a diner can leave satisfied without crossing that psychological threshold.
