This Monday, the Hotel Rey Sancho in Palencia hosted the grand finale of Una de Bravas, the International Patatas Bravas Competition that seeks the best in the world and this year celebrates its fifth edition. A total of 18 finalists -five of them from the Community of Madrid- have faced each other in the last phase of this contest, which has resulted in the Madrid restaurant Bestial by Rosi La Loca (calle del Prado, 4. Bajo C) making the podium with a third place .
His recipe has managed to convince a jury chaired by Miguel Cobo and composed of renowned members such as Rafael Ansón (Honorary President of the Academy of Gastronomy) or Anna Terés (better known as Anna Recetas fáciles in social networks).
Among the aspects that the jury valued were “the viability in bar, the characteristics and qualities of the sauce, the cooking or frying of the potato” but, above all, “the flavor and texture”.
How are the third best bravas in the world?
Under the name “Bravas bestiales” chef Javier Alfaro has presented this proposal, about which the following has been said: “They are honeyed inside and crunchy on the outside and with different textures that provide a differentiating touch. And what can we say about the sauce… which integrates 15 ingredients and culminates a top recipe“.
The podium of the best bravas 2024
At Bestial they are already familiar with the awards: last year they won the silver medal in this same contest and this summer the Association of Chefs and Pastry Chefs of Madrid (ACYRE) awarded them the recognition for the best cheesecake in Madrid.
As for the podium of the best bravas in the world 2024, it has been as follows:
- Restaurante Martina (Javier García Albuguer). Albacete.
- Flamma (Ariel Munguia). Valladolid.
- Bestial by Rosi La Loca (Javier Alfaro). Madrid.
In addition to the bronze, Madrid won another award in this contest: the mention for the most innovative bravas for the proposal of the restaurant Le Qualité Tasca (Calle de Ponzano, 48).
