
In Leganés there is a restaurant in a wooden house surrounded by trees. It sounds like a typical fairytale phrase, but the Michelin Guide does not usually work with metaphors. Santé – like the French expression for toast – is the only restaurant in the municipality that has made it into their selection, and it has done so two years in a row.
In 2024 they recognized it as Bib Gourmand, and in 2025 they have renewed the award. In other words: outstanding food at reasonable prices. Or as the guide defines it, “complete meals at competitive prices”.
The first restaurant in Leganés to appear in the Michelin Guide.

Santé is on Avenida del Dos de Mayo, number 1, a short walk from the Carlos III University campus, and 50 minutes by public transport from the center of Madrid. It is not a place you arrive at by chance.
The history behind it is not accidental either: the space belonged to the parents of Andrés Palomo, owner and boss of all this, who saw after the pandemic an opportunity to reinvent the place and open his own restaurant. He did it with a short but clear menu, focused on embers, product and a wine cellar that competes with many capital cities: more than 900 wine references from all over Spain.
Andrés Palomo and the history of Santé

Palomo studied hotel management from the age of 18 and trained with Pedro Larumbe, from whom he learned – as he reports in the Michelin Guide interview – about market cuisine and, above all, the Navarrese vegetable garden. Santé’s most photographed dish, and also the most celebrated, is the applewood-smoked avocado with pico de gallo, feta cheese and lime-cilantro gel (18 euros).
The steak tartar also works particularly well, and for those who want to try everything without deciding, they have a tasting menu for 49 euros (without drinks), which includes two starters, fish, meat, dessert and bread.
The restaurant is open from Wednesday to Sunday at noon, and from Thursday to Saturday also in the evening. In May, the Michelin Guide itself highlighted it as its “Bib Gourmand of the month”, a fancy way of saying that there is something special about this place.
