The best way to know if a Mexican restaurant in Spain is really Mexican? If it has the Copil Seal. This distinction – something like the Michelin Guide of Mexican cuisine – recognizes the gastronomic excellence of almost a hundred restaurants throughout Spain. And no, not only in Madrid.
The fourth edition of the Copil Seal, promoted by the Fundación Casa de México en España (FCME), together with the Mexican Academy of Gastronomy (AMG) and the Mexican restaurant guild, has awarded those restaurants that achieve something unusual: to serve Mexican food with soul, without shortcuts, without clichés, with ingredients brought from there and real techniques.
This network of award-winning restaurants ranges from Andalusia to Asturias, passing through Catalonia, Galicia, Valencia or the Basque Country, which reflects the growing love (well deserved) that Spain has for Mexican gastronomy -recognized as Intangible Cultural Heritage of Humanity by UNESCO-.
But what does it take to get this seal? A couple of margaritas and some nachos with guacamole are not enough. The selection process includes self-evaluations, technical inspections, mystery visits and an expert report that reviews every detail: from the menu to the mole.
