
It’s a list that keeps growing, Madrid’s Michelin-starred restaurants are putting the capital in the spotlight of world gastronomy. It is not surprising that food has more and more weight among the reasons why tourists visit Madrid.
Although it is also difficult to resist Madrid’s charm, the city’s well-known Michelin-starred restaurants such as DiverXo, Coque or DSTaGE have laid the foundations for a very attractive and ever-growing gastronomic scene.
1. Yugo the Bunker⭐
The symbiosis of experience and product quality can only result in one thing: one of the best gastronomic evenings whatever your gastronomic background. Yugo the Bunker replicates the experience of eating in a Japanese bunker and brings together some of the best cuts of fish that can be found in Spain: the sea bass belly nigiri or the ora king salmon usuzukuri are likely to generate a full-fledged stendhalazo in the diner.

2. DSTaGE ⭐⭐
The urban and casual image of this restaurant perfectly portrays its chef, Diego Guerrero. His desire to achieve a closeness with the customer is evident in the setting, where what happens in the kitchen is in full view of the diners. The acronym that gives it its name is a reflection of its pretension: Days to smell, taste, amaze, grow & enjoy. That same essence is also materialized in its gastronomic offer that, free of ties, combines elements of Spanish, Mexican and Japanese cuisine. It offers the tasting of its dishes in two types of menu: the Dstage, composed of 15 elaborations, and the Denjoy, with 18. Only 8 months after opening its doors to the public in 2014, DSTAgE became one of the Michelin-starred restaurants in Madrid.

3. Deessa ⭐⭐
Quique Dacosta’s first restaurant in Madrid, whose cuisine is captained by Ricard Tobella, has not been without success. It received its first Michelin star at the last edition of the awards. Its setting could not be better. Located in the Alfonso XIII room, Deessa is in charge of the gastronomic offer of one of the most iconic hotels in Madrid, the Mandarin Oriental Ritz and overlooks its gardens. However, the greatest privilege is to sit at her private table for 10 people, the ‘Hidden Table’, which implies a privileged view of the hustle and bustle of the kitchen and the opportunity to meet the chef. Its offer is based on two tasting menus, both impregnated with the essence of the Mediterranean. On the one hand, there is the Quique Dacosta Historical Menu, which compiles his most emblematic dishes, and on the other, the QDRitz Contemporary Menu, which is composed of a list specially designed for this establishment.

4. Paco Roncero Restaurant ⭐⭐
Its previous name, La Terraza del Casino, referred to its spectacular location, the highest floor of the Casino de Madrid. In fact, from its terrace you can enjoy some of the best panoramic views of the city. However, its interior dining room is not far behind either, with a colorful and geometric decoration that has nothing to envy to the exterior. They describe their gastronomic offer as a sensory experience, captivating for the quality of its raw material and for its fusion of some of the great classics of international cuisine. Its dishes can be tasted in two menus: the Affirmation or the Vindication. Considered one of the best in Spain, Paco Roncero also has his own cooking school in the city.

5. Smoked Room ⭐⭐
With six months of life and won two Michelin stars. That is the background of Smoked Room, the latest project of Malaga chef Dani García. Coated in elitism and with seating for only fourteen people, Smoked Room (located in the Hyatt Hesperia hotel) is surrounded by an aura of exclusivity. Not in vain, the place where it is located was previously occupied by Santceloni: as if there were something in the ether that facilitates the attainment of excellence.

6. Quimbaya by Edwin Rodriguez ⭐
One of the last lucky ones to receive the Michelin star is Quimbaya. We were able to visit it as soon as it opened and we already warned that it was going to be something to talk about. The prediction fell short and the cuisine of Colombian chef Edwin Rodriguez is tinged with the golden color that stars in the decoration of the restaurant and gives its name to the concept of its cuisine. Quimbaya’s decoration is a tribute, a recognition to one of the most important indigenous civilizations in America. We also include it in a list of the best international restaurants in Madrid.

7. Gofio ⭐
Having gone to Gofio before it received the Michelin star is a bit like listening to C. Tangana when he was Crema: a sense of pride and yoyalodije matched by few other life scenarios. The recognitions to Dabiz Muñoz go beyond his three Michelin stars. In fact, he was voted the best chef in the world twice by The Best Chef Awards. His originality is probably the main key to his success, as his conception of cuisine is far from being confined to any corset. And DiverXO is the living reflection of this, a culinary journey through the imagination of his chef in which everything is possible. The spectacle he offers goes beyond taste. His dishes, inspired by Asian cuisine , are served in phases, composing a picture before the diner’s eyes.

9. A Barra ⭐
A’Barra, which has been fighting for more than seven years in the gastronomic world and only six months less in the Michelin universe (it only needed six months to become one more of the Michelin-starred restaurants in Madrid), hardly needs any introduction. But just in case an introduction is needed: reader, here is one of the best restaurants in Madrid. Sergio Manzano is the chef who leads A’Barra, a restaurant with very specific flags: the extremes, the strong flavors, the power of the umami are almost the common note behind each dish.

10. RavioXO ⭐
Six months after its opening RavioXO, Dabiz Muñóz’s latest restaurant, won its first Michelin star. The chef from Madrid explores pasta in all its forms and temperatures in this restaurant. With his characteristic intention of trying to create his own language, this time through pasta, he brings Italian cuisine closer to Chinese cuisine -something Marco Polo would have supported- although he does not forget Spanish gastronomy either. RavioXO is an affordable option to discover the XO universe.

11. Chirón ⭐
If you had been scrolling for a while until you got to an accessible tasting menu: prize. Chirón’s menu is the cheapest Michelin menu in Madrid. Nobody gives you so much (in quality and quantity) for so little. Chirón, commanded by the Muñoz Bargueño brothers (Iván is the chef and Raúl the sommelier), has held the Michelin star since 2013 and revalidates it year after year. It does so through two tasting menus: the Tajo (120 €) and the special nights (58 €).

12. Saddle ⭐
Saddle landed in Madrid in 2019 and only needed a year to debut in the firmament of Michelin-starred restaurants in Madrid. Due to its commitment to seasonal products, its menu is as variable as it is surprising. At the time of writing these lines, the star product of its gastronomic offer is the truffle, integrated in dishes such as tocinillo de cielo with almond soup and black truffle.

13. Corral de la Morería ⭐
In Corral de la Morería art is not only on the stage: it is also found in the kitchen. At the helm is chef David García, trained with great figures of gastronomy such as Martín Berasategui, who before moving to Madrid developed his work at Nerua, the Michelin-starred restaurant of the Guggenheim in Bilbao. Rodrigo de la Calle is responsible for this gastronomic proposal that can be summarized as “green haute cuisine”. To discover that two concepts as apparently antagonistic as casquería and haute cuisine are not only combinable, but also very compatible. Clos customers are not diners, they are guests. That is the premise behind this restaurant owned by Marcos Granda, also owner of Skina in Marbella. Toki is the most exclusive corner of Japanese cuisine in Madrid. With only six diners per service, this restaurant led by chef Tadayoshi Motoa, manages to create a careful atmosphere where every detail counts. Among its dishes are the sea bream sashimi with white asparagus, Galician clam chawanmushi and unique nigiris such as baby squid with lime.
