“The queues that form at Locco Pizza before opening are reminiscent of those at Doña Manolita on December 21″. This is what our colleague Pedro Pineda said about this restaurant in Carabanchel during his visit last year. Queues that, a year later, have moved to another place: the previous location was too small and now Locco Pizza has just opened a new one with more space to cope with the demand.
The neighborhood chosen was Usera, specifically number 9, Francisco Ruiz Street: “Because you asked for it, here we have the new Locco Pizza. Bigger as you wanted it and with more capacity,” Elder Alonso explains to camera in an Instagram video.
In that same video, Alonso shows the decoration and the new space, now with capacity for reservations and a wide bar: “The previous one was very good, it sold a lot, but it lacked space,” he explains.
The paradox of the pizzeria that triumphs for its sandwiches
For the rest, Locco Pizza continues to maintain its essence and, above all, the star product that made it so famous at its previous location – defying any business logic: it is not a pizza, but its Cuban-style roast suckling pig shoulder sandwich.
The sandwich triumphs in its -at least apparent- simplicity: suckling pig meat with lettuce, tomato, salt to taste and a piece of crispy skin. However, as they themselves explain in other videos, the preparation is the key to their success.
They detail the process step by step: two small jugs of water so that the meat does not dehydrate, wooden blocks so that the skin does not touch the bottom and two hours in the oven seasoned only with salt and pepper. After that time, they turn the meat over, spread butter all over the skin and bake for another hour and a half to get that juicy inside and very crispy on the outside.
In the new location, which opened this Thursday, October 30, they have placed the neon of the old one as a vestige of its origins. And in their Instagram user name -at least for the moment- they have kept the “104”, as a reminder of the number of Oporto street in Carabanchel around which they managed to gather so many people.
