On September 1, a new destination will be added to Madrid’s culinary map: Nobu Madrid (Calle Alcalá, 26), the restaurant co-founded by chef Nobu Matsuhisa, actor Robert De Niro, and producer Meir Teper.
The concept will arrive in the capital after having made a name for itself around the globe thanks to its distinctive and recognizable “Nobu style” —a reinterpretation of traditional Japanese cuisine with Peruvian influences—and by giving each restaurant (whether in Tokyo, London, New York, or, coming soon, Madrid) its own unique personality.
As for the space, the restaurant was designed by Studio GRONDA and will feature three levels (lobby, ground floor, and rooftop on the seventh floor) in a minimalist Japanese style. Its hours of operation will be from 7:00 p.m. to 1:00 a.m., Monday through Sunday.
What kind of menu will Nobu Madrid feature?

Nobu Madrid’s menu will feature the dishes that have made the chef and the brand world-famous, such as his now-legendary Yellowtail Jalapeño ( Japanese yellowtail with garlic paste and jalapeño slices), as well as others made with local ingredients and inspired by Madrid, such as Nobu-style gildas, blue cheese and toro croquettes, Canarian sea bass, and Mediterranean tuna.
For those who have never dined at Nobu, the chef recommends trying three or more of the eight signature dishes on the menu to share: two or three cold dishes, two or three hot dishes, a little sushi, and a dessert. This would make for the following tasting menu:
- To whet your appetite: Yellowtail Jalapeño. Thinly sliced horse mackerel sashimi with garlic purée, garnished with jalapeño slices, topped with cilantro, and served with Japanese soy sauce infused with citrus (six pieces per serving).
- For a salad: Sashimi Salad with Matsuhisa Dressing. A salad featuring seven pieces of lightly grilled tuna sashimi, sprinkled with black pepper on a bed of greens and served with Nobu Matsuhisa’s signature onion and soy sauce dressing.

Pricing and How to Make a Reservation at Nobu Madrid

If we follow the recommendation of choosing eight dishes from the menu, the average price could be around €204 for a table of four (about €51 per person), based on prices at Nobu Las Vegas. In addition to the à la carte menu, there are usually seasonal menus, special event menus, and brunch options.
Although there are still a few weeks to go before the restaurant opens, you can already reserve a table online through the website: simply indicate the number of guests (up to 20 people), the date, and the time, and choose between the sushi bar area (where you can watch the chefs prepare sushi, sashimi, and signature dishes right before your eyes) and the dining room.
