With two locations, Lavapiés and Chamberí, Madrid has a new place of pilgrimage for Spanish omelette lovers: La Falda. The restaurant, run by young chef Alejandro Oliveira, has just won the prize for the best Spanish omelette at the National Championship held at Alicante Gastronómica, a triumph that confirms its status as a gastronomic phenomenon in the capital and throughout the country.
La Falda, which makes more than 60 omelets daily, has stood out for its mellow Betanzos-style version, a traditional Galician recipe that dispenses with onion to highlight the juicy texture, without being liquid, and the intense flavor of the egg. The chef uses select products such as eggs from Mos hens, Monalisa potatoes from Segovia and onion chorizo from Lalín, in a combination that in every bite reminds us of the Galician family recipe book and the authenticity of its origins.
The best omelette in Spain
In addition to the winning omelette, they have less classic versions that incorporate regional ingredients such as turnip greens and chorizo, which was also awarded in 2023, in the same contest, but in the section of omelette with more things.
They only prepare six of these tortillas a day, so if you want to try the pincho that swept the competition, you have to go between 1:30 pm and 8 pm. The price of this year’s winning tortilla is 18 €.
The secret is in the raw material and the know-how of Oliveira, who learned in the kitchen of his family and has opted for a simple but perfect recipe. In statements to Alicante Gastronómica, the chef summarizes that the secret is “to make it many times and trust in what you do”. The jury formed by great names of the national culinary scene has valued precisely that authenticity and mastery in cooking.
La Falda already has the title of best omelette in Spain on its door and proves, day after day, that well-worked simplicity has the capacity to conquer the palates of experts and amateurs.
