Created by Spanish chef Nino Redruello, the cake straddles the line between firm and creamy. It achieves a striking contrast thanks to its toasted exterior and also uses a hint of blue cheese to enhance its intensity.
Inspired by a Basque master

Fismuler’s famous cheesecake can be sampled at its restaurant, located at 19 Calle de Sagasta in the Chamberí district. Although it’s in Madrid, the cheesecake is inspired by Basque tradition, as chef Nino Redruello explained to the Michelin Guide.
His greatest influence has been Michelin-starred chef Hilario Albelaitz, whom he considers“the father of all cheesecakes in Spain.” After spending six months learning in his kitchen, Nino Redruello has gradually perfected his recipe until he came up with one that has earned recognition from the Michelin Guide.
Throughout the process, he has kept several ideas clear: that the cake should not go in the fridge, that it should always be made on the same day, that it should be enjoyed warm, and that it is designed for true cheese lovers.
The experience at Fismuler

Fismuler opened in 2016 as a contemporary eatery with a strong Mediterranean identity. In addition to Nino Redruello, chefs Jaime Santianes and Patxi Zumárraga also run the business.
Each season, they strive to refresh their menu and focus on exploring new flavors. Among their savory dishes, highlights include baby squid with piparra pepper emulsion, San Román veal escalope, and semi-cured sea bream with almonds and grapes.
Although its cheesecake was already popular before , thanks to the Michelin Guide’s rating, it is now crowned the best place to enjoy this dish in Madrid.
