Pollos del Sur is the new project from Genaro Celia and Agustín Mikielievich, the creators of Insurgente, and has just opened at the Mercado de Prosperidad with a concept that’s simple to explain but hard to forget: fried chicken made from scratch, secret marinades, crispy batter, and sauces that capture the essence of Latin America.
The idea behind Pollos del Sur is to open a fried chicken spot that breaks away from convention, doesn’t copy the big chains, and treats this popular dish with the respect due to well-executed cuisine. To achieve this, everything begins long before the fryer.
The chicken burger as the star

On a short, no-frills menu, the chicken burger has become the star of the show. The team cites it as their signature dish because of how it combines all the restaurant’s key elements: juicy chicken thigh, crispy batter, fresh coleslaw, and Insurgente’s now-famous sauce, which delivers the burst of flavor that sets it apart from any standard chicken sandwich.
Orbiting around it are other staples of the crispy repertoire, such as tenders and wings with varying levels of heat, or burritos and sandwiches where the chicken is paired with guacamole, pickles, and other Latin American influences.
