Alberto de Luna unfilteredly shares his opinion on gastronomic businesses all over Spain. His sincerity, with admirers and detractors, has led him to gain more than 100,000 followers on social networks.
“I consider that you come to life to play and I try not to pass up the opportunities that come my way,” he explained through his latest Instagram post, in which he also announced the opening of Bakko, his first restaurant. The number 9 of López de Hoyos street will host the new location in February this year.
Haute cuisine in a minimalist space
Bakko, whose name refers to the Greek god of wine (called Bacchus in Roman culture), and the Japanese word bako (meaning ‘surprise’), will be a bet on the most authentic Japanese food, made with high quality national products.
Although the protagonist of the space will be an ‘omakase’ bar, there will be an informal table area.The food critic has revealed to Esquire magazine that there will be hand rolls, dim sum and katsu sando among other appetizers, as well as a careful selection of wines. De Luna intends to offer “up to 200 references” of exclusive wines at affordable prices.
Lunch or dinner at Bakko will start at 90 euros per person, a much lower price than a menu at DiverXO, owned by Dabiz Muñoz, among other haute cuisine restaurants.
Barrio Bohrer, a minimalist architecture and design studio that has gained recognition in Madrid for its high-end renovations, will be in charge of the decoration of the space. In this project, which aims to break with the majesty of traditional oriental restaurants, the micro-cement furniture cladding will be key to give a modern and casual touch to the restaurant.
