The identity of Madrid’s gastronomy, well thought out, is inseparable from the casquería. It is enough to think of many of its most typical dishes (tripe, entresijos or ear) to realize that the culinary casticismo of the capital goes hand in hand with the entrails.
Taking into account this reality and having restaurants that claim the tradition and gourmetization (if you allow the expression) of the casquería, Alberto del Prado Izarbe (director of Qué Rico España) organizes the fourth edition of the Casquería Route, sponsored by Casquerías Oscar. A route, by the way, that will be held from November 8 to 30.
The organizer says about the event: “here we can find elaborations for all tastes: from very traditional recipes of all life, through a multitude of stews and fried food, to enjoy a high-end cuisine by a Michelin star, where it has been demonstrated that the casquería is a flagship product and worldwide recognition”.

In addition, contests are organized on social networks where you can win a meal at La Tasquería, the Michelin restaurant of chef Javier Estévez, or at two other restaurants on the route. There will also be drawings for lots of wines and visits to Madrid wineries for those who share photos of casquería dishes paired with Madrid wines, and cooking workshops given by renowned chefs.
One of the great novelties, by the way, is that three Ecuadorian restaurants are participating in this edition. On the other hand, for each dish of casquería sold, the event organizers will donate one euro to the NGO ‘Action Against Hunger’, which will go to the Valencian population.
