The most typical sweet of Morata de Tajuña is now closer than ever. Many people travel to this municipality southeast of Madrid to try them at the great Palmeritas de Morata Fair, which is being held this weekend. But there are also options for those who do not want to go far from the center.
In the Tirso de Molina Market, next to the Puerta del Ángel metro station, the Mantequería ALMA sells the authentic palmeritas de Morata every Thursday and Friday. They are made by Pastelería de la Torre, creator of this artisanal product and also a participant in the fair. With its puff pastry and chocolate coating, it achieves the unmistakable flavor that has made them famous throughout the region.
From classic puff pastry to nougat

Lotus, oreo, pistachio, pink panther and even chocolate Dubai are just some of the variants of the classic palmerita. All of them maintain the original recipe and process, which emerged at Pastelería de la Torre in 1968. Since then, the bakery has adapted to new trends, guaranteeing a product with flour, butter and top quality chocolates.
In addition, this year the bakery has introduced a great novelty: the turrón de palmerita. With it, they adapt to the Christmas season and manage to capture the traditional flavor in a new version, which can also be purchased at Mantequería ALMA.
Bringing tradition closer

The store, located in the Tirso de Molina Market, aims to bring consumers closer to the gastronomic heritage of the Community of Madrid and the palmeritas de Morata are a good example of this legacy. Every Thursday and Friday, ALMA receives this sweet and makes it available to its public.
“I wanted to bring products that are part of Madrid’s gastronomic imaginary, that excite and that connect with our traditions and our commitment to evolve,” explains its owner, Elvira Lalana, in a statement to the media.
Other handcrafted products

Just a month ago, Mantequería ALMA opened its doors to showcase the most local flavors from the villages and mountains of Madrid. At their stand, they combine contemporary aesthetics with traditional touches, such as the carnation in their logo, which alludes to this commitment to tradition.
Their catalog is made up of products from Madrid and artisan products, such as oils from the Villaconejos area; artisan cheeses from La Cabezuela, Campo Real, Alimentos de Miraflores and La Rosa Amarilla or the excellent wines from their four regions. You can also find filled roscones from the Yolmar bakery in Alcalá de Henares, among others.
And to celebrate Christmas, they have prepared gift boxes with products from Madrid, gifts and an original watercolor by Pepa Aoiz. Everyone who passes by their stall at the Tirso de Molina Market will be able to take a piece of the region with them.
