
“A celebration of the sea, of Peruvian cuisine and of life.” This is how La Mar ( Avda. del General Perón, 36), the restaurant to be opened by Gastón Acurio in the capital, is defined. The chef, one of the most influential chefs in the world according to the Madrid Fusion Congress, highlights the seafood and fish dishes typical of Peruvian gastronomy in his new project, which will open in March 2025.
An ode to the cevicherías of Peru.
“La Mar is a tribute to the traditional Peruvian cevichería, with a casual atmosphere. We seek to offer a vibrant and festive experience, where our diners can enjoy authentic Peruvian cuisine in a cozy and contemporary setting,” the restaurant’s team explains to Madrid Secreto.
The name of the place gives us clues as to what the house specialties are. The restaurant confirms: “the menu will focus on classic dishes such as ceviches, tiraditos and causas, prepared with products of the highest level and Peruvian ingredients”.
As for the price range, the restaurant bets on both simple and luxurious products. “Anyone will be able to find dishes according to their pocket. Those who want luxury will find it, and those who want tasty cuisine with delicious products and less luxury, will also find it”, explains the La Mar team.
From Paris to around the world with Peruvian dishes
After training at the prestigious Cordon Bleu school in Paris and founding his first restaurant, Astrid & Gaston, Acurio discovered that his path was to experiment with the gastronomy of Peru, his country of origin. Thus were born Tanta, Yakumanka, Papachos and the rest of his successful brands (ten in total), which have made Peruvian cuisine trendy in Europe, the Middle East and North America.
