Among the amalgam of new trendy sweets, pastries and cakes, there seems to be a classic that is experiencing a revival: the American-style pancakes, or pancakes, in English. As a counterpoint to healthy food and full gyms, it seems that during the weekend it is the places that make fluffy, juicy pancakes with sweet and savory accompaniments, which take over. They don’t have to be specialized places, or even cafeterias, but pancakes are the star of their menus.
Watts Cantina
Getting a table at Watts on a Sunday morning is like getting into the hottest nightclub at two in the morning on a Saturday. The main reason people wait a long time at the door to get tables is because of their pancakes. The classic ones come with maple syrup and butter, but their signature dish is the pancakes with bacon, egg and Canadian maple syrup. They serve them all day long and if you want you can change from specialty coffee to a natural wine.

Vips
Eating pancakes at Vips is the closest a Madrilenian can get to the American diner experience of the movies. Although their menu is extensive, always with nods to the most classic fast food, pancakes are a classic here, although every Christmas they reinvent them with new recipes and toppings for a limited time.

Its name already gives you all the clues that here you will make your dreams of a hearty breakfast come true. And of course, this brunch temple could not miss the pancakes in their different forms: with fruit, with chocolate and cream, with bacon or syrup…. The list is so long that they could have a separate menu like the drinks and wine list in a restaurant.

Kricky Pelton
Kricky Pelton is a hamburger restaurant, in particular of smash burgersbut the pancakes attract a good part of the clientele. This restaurant is named after the owner’s mother, a Texan who has perfected the pancake recipe over the years. Favorites include Grandma’s Pancake with cream and homemade maple syrup or Criminal’s Pancake with Nutella.

Sufu Cake
Sufu Cake first became famous for its Japanese cheesecake, and for the rise of Japanese pastries in Madrid. But their soufflé pancakes are just as popular, if not more so, than the cakes. They do not follow the exact recipe of the classic pancakes, in fact they are a more sophisticated version, like almost everything Japanese.
