The capital empties out in summer, but for those who have to stay or come to visit there are some rewards for enduring the 40°C asphalt, such as the restaurants that open in august in Madrid. The main advantage is that while the rest of the year you have to make reservations at many of them two weeks in advance, during this month the city recovers the spontaneity of being able to present yourself at the trendy restaurant even without prior notice.
1. Persimmon’s
Persimon’s is the most praised restaurant of the season and to the good fortune of local foodies and newly arrived tourists it will not close for the whole month of August. Their success can be explained by three facts: they have an original proposal, based on Georgian cuisine; an elaborate cocktail menu and they have a beautiful location in Salesas, the current hot spot of Madrid’s gastronomy.

2. Kitchen 154
The mecca of spicy food in Madrid stays open in August and also during the week they have a menu they call “Happy Meal” in their Noviciado location (Calle del Acuerdo, 3). In Kitchen 154 you can find dishes from the gastronomy of India, Sri Lanka, Korea, Pakistan and Bangladesh with a common denominator: they all bite.
Recently, they have opened a new location, but its location is secret and they only tell you if you ask on their Instagram privately.

3. Mama Campo
Mama Campo’s claim is: “from traditional to healthy” and they are consistent with it. But in addition to eating healthy, another summer advantage of this restaurant is its location: it is right in the Olavide square, with a great terrace. The menu of this restaurant includes roasted leeks with jerky crumbs as well as a quinoa salad (with or without salmon), always adapting to the seasons.

4. Gofio
Gofio, the restaurant that brought Canarian haute cuisine to Madrid, reopens in a new location and will remain open throughout the month of August. In their previous location they had a Michelin Star, so it would not be strange if they repeated the feat in their new stage. Undoubtedly, this is one of the must-try restaurants in Madrid sooner or later, so these weeks are a good opportunity.

5. Villa Verbena
Villa Verbena has a privileged location among the restaurants that will be open during the month of August in Madrid. On the shores of the Casa de Campo lake, this restaurant is located in one of the coolest spots in the whole city, with up to 8 °C difference with Malasaña.
This restaurant is the bet of the Triciclo group with The Hat Madrid in the lake of Casa de Campo. It has 600 m² of terrace and from any of its tables you can see the water, the trees and the profile of some emblematic buildings of Madrid that seem to be farther away than they really are.

6. Mo of Movement
Mo de Movimiento is more than a restaurant, it is a complete project. And it ranges from social inclusion to environmental, in fact, summer is a good time to see how their air conditioning system works through botijos on the roof.
In the menu you will find dishes made with local and high quality products: beet hummus with homemade pitaccia, roasted bell pepper and cured egg yolk or its delicious cheesecake are some examples. Without forgetting its pizzas made in wood oven.

7. Superchulo
Superchulo is a hit on social networks and in the more physical reality. Its motto, “count colors, not calories”, sums up its essence: vegan and vegetarian cuisine, as aesthetic as it is appetizing. If after weeks of heat all you can think about is refreshing, light food, this restaurant will be open in August.

8. Corral de la Morería
The Corral de la Morería is one of the oldest and most famous tablaos in Madrid, since it opened its doors in 1956, this emblematic space of the capital has achieved that every night renowned artists such as Antonio Gades, La Chunga, Pitingo, José Mercé, Belén López or Alba Heredia have taken the stage. But its appeal is multiplied by its cuisine, worthy of a Michelin Star. If you have never had the opportunity to go, August is the month to go, because it is still open and there is a better chance of getting a reservation.

9. Terracotta
Terracotta is one of the most beautiful restaurants in Madrid thanks to a decor reminiscent of an anthill: the sinuous shapes, the brownish and reddish colors contribute to create a peaceful feeling of comfort. This August it will remain open and adapts its menu to the dates with dishes such as cherry gazpacho, cod cocochas or a mellow rice with cruciferous vegetables.

10. High Bar
Barra Alta is already a classic in Barcelona and for the last few years also in the Salamanca neighborhood in Madrid. Dani Roca, the executive chef, has decided to refresh the days of August with a protagonist ingredient: the wild tuna that will be in his new dishes. The tartar is accompanied by cherry tomato, olive tapenade and xató sauce, a nod to the cuisine of Catalonia. In addition to the classic tataki with curry and poppy seeds.
