The bar and restaurant La Falda, in Lavapiés (4, Miguel Servet Street) already knows what it is like to have its omelette recognized by a jury, but that does not mean that the achievement tastes any less.
On the contrary: Alejandro Oliveira, the chef, told El País Gastro that “It’s a dream. I thought we had little chance because our omelette is very different from the rest”. And following this maxim that Higinio Gómez verbalized in an interview – “good cooking starts in the market”- an important part of their success lies in the product they use.
Their omelette, Betanzos style, is made with eggs from Mos hens and the potato is of the monalisa variety.
How much does the second best omelette in Spain cost?
The recently awarded second best omelette in Spain can be tasted at the Lavapiés restaurant and costs 16.50€ (four portions). Until now Oliveira made a maximum of 60 tortillas a day, but after the contest he does not rule out preparing any more.
