For some time now, Madrid’s restaurants have ceased to be home for some of their chefs. More and more events are pulling them away from their stoves to take them to festivals or other kitchens. And that is what Two Many Chefs (on the rooftop of The Hat) represents: a culinary series that transforms its terrace into a pop-up dining room for five nights—or into a dining room featuring chefs who rotate on a pop-up basis.
The first edition took place in 2018 and now returns with a format featuring a different chef each night, a menu created exclusively for that occasion, and just 60 seats available. The dinners will take place between June 2 and 30, bringing together some of the most recognizable names in Madrid’s current culinary scene, and reservations can be made on the hostel’s website.
Some of these recognizable names include NaNum, Insurgente, Brutalista, La Raquetista, Tripea, and Itama. Interestingly, they all share something that fits the series’ concept: none of them have their own terrace, and all will bring their cuisine, for one night, to an open rooftop.
The participating restaurants of Two Many Chefs

The program kicks off on June 2 with Lis Ra, chef at NaNum, whose blend of Korean cuisine and Argentine roots has turned her small spot in Chueca into one of the most talked-about openings of the past year. On June 9, it will be Insurgente’s turn, the project by Genaro Celia and Agustín Mikielievich at the Chamberí Market, where Latin American flavors, French technique, and Japanese touches come together.
Pablo López will bring the world of Brutalista to the terrace on June 15, with a cuisine that blends marinated dishes, offal, and Asian influences in an industrial-style venue in Argüelles. Next up is Javier Aparicio, who has been at the helm of La Raquetista in Retiro for a decade, and the finale will be led by Roberto Martínez, chef at Tripea and one of the names most closely associated with fusion cuisine in Madrid since his time at the Vallehermoso Market.
Each dinner will begin at 9:00 p.m. and will consist of five courses and dessert, priced at 65 euros per person and including two drinks.
