Can lovers of a plate of food be in mourning? In light of the facts it remains that omelet dilettantes have reason to be. If a short time ago we reported about the closing of Juana la Loca the tortillas that warranted queues in La Latina, today it is the turn of Sylkar -the tortillas that also justified queues, devotion and pilgrimage in the area of La Latina-, today it is the turn of Sylkar -the tortillas that also warranted queues, devotion and pilgrimage in the area of La Latina Ponzano.
The iconic Madrid coffee shop with more than fifty years of service on its walls announced yesterday on Instagram the closure of a small local through which “stories, conversations, laughter, breakfasts, returns from work, first dates, reunions with friends have passed…”
the reasons? Unlike other recent closures conditioned by gentrification or the purchase of buildings by vulture funds, here we must find the reasons in the retirement of the owners. Sylkar closes by law of life, but not before leaving a message of hope: “We are very sure that this small cafeteria at 17 Espronceda Street will soon shine again”.
A secret omelet
It seems incredible that a dish with only three ingredients can hide so much mystery. About Sylkar the omelette expert’s omelet Guillermo V. Rodríguez he told us the following: “this is a secret that will never be known, but I have been told that it is made with chicken broth and that is why it has a special flavor. I don’t know how true that is.”
Its special flavor, on the other hand, led it to be finalist in a Spanish Potato Omelette Championship held in Alicante in 2021.
Now that flavor will remain in the memory of whoever has tasted it and will become part of that individual entelechy of emblematic restaurants or businesses that need very little time closed for us to miss it. To walk with a friend who comes from abroad, pass in front of a place where maybe they make baos or smash burgers and say with nostalgia: “here they made the best omelettes in Madrid”.
