It’s time to pay tribute and take a tour of the best huevos rotos in Madrid because before -long before- the chefs with Star started to deconstruct the typical dishes to make them sophisticated, in any tavern, bar or unpretentious restaurant you could eat something hard to beat: fried potatoes with some eggs (also fried, obviously) on top. It was clear that it had to appear on this list. They have been preparing the most famous huevos rotos in Madrid (and one could almost say in Spain) since 1974. It’s almost a must-see in the capital and if you’re lucky, you might even run into a celebrity. Their scrambled eggs with potatoes and Iberian ham are still making history.

2. Los Rotos
You have to rely (almost always) on specialized sites. At Los Rotos they take it very seriously, they explain it like this: “Our specialty is scrambled eggs on a bun of soft bread with potatoes and an ingredient to choose from our wide range of ingredients: gulas, chistorra, blood sausage, ham, mushrooms, Roquefort, cod, piquillo peppers, and chicken breast with garlic”. Now all you have to do is choose, which is quite a lot.

People who try their huevos rotos with potato chips and ham think the potatoes are from a bag because of how thin and crispy they are, but they prepare them themselves. In addition, they use free-range eggs and it shows. Don’t forget to ask for bread to wash down your plate, because it’s going to happen. It is a must for a good afternoon of tapas in the city La Latina.

4. Arzábal
The arzábal Group has become one of the must-try traditional dishes, always with a twist, from the Villa y Corte. Whether for tapas in Retiro or in the Mercado de San Miguel, their scrambled eggs with truffle turn such a simple dish into a delicacy. It is a dish that has been with them since their beginnings and needs no variation: three main ingredients and nothing is missing.

5. La Carmencita Tavern
The second oldest tavern in the capital city, after the Botín House could not be missing in the list of the best huevos rotos in Madrid. Both the decoration (traditional and tasteful) and the service already make it a place to repeat, but if we add to that that their fried eggs are organic and are accompanied by chorizo, black pudding or Iberian shoulder (or all three if your arteries allow it) the visit becomes mandatory.
Of course, the eggs are served with their lace, that crispy edge that appears when the edges of the egg white are toasted.
