José Andrés is not only a chef. He is a disseminator of content about gastronomy in social networks and on television. Not content with this, the famous Asturian chef publishes his favorite bars and restaurants in the world in The Chef’s List, a newsletter for great travelers and lovers of good food. The project was developed during 2023 and had the province of Barcelona as its starting point.
Currently, José Andrés’ gastronomic newsletter brings together establishments from Greece, Istanbul, the United States, Peru, Mexico and many parts of Spain. Its content is complemented by a Youtube channel with interviews and reports featuring the chef.
Casa Dani: the birthplace of an emblematic omelette

One of the places that the chef has recommended to his audience this summer is the Casa Dani in the Mercado de la Paz (calle de Ayala, 28). This place was awarded as the best bar in the city in the Premios IV Gastronomía de Madrid (2019). Among all its traditional cuisine dishes, its mythical tortilla de patata stands out, whose recipe has been conquering the capital for more than 30 years. This omelette is José Andrés’ favorite despite the media alarm caused last year by salmonellosis outbreaks derived from the consumption of this dish.

In total, about 400 tortillas a day come out of Casa Dani. The formula for its star dish is infallible. Its onions and potato slices are confit to the point of salt. They are mixed with beaten eggs and then rested for 10 minutes. Then the scrambled eggs are taken to a frying pan over medium heat, where the mixture is simply turned over and over to achieve that slightly curdled texture that boasts so much success.
The star of Casa Dani has a very competitive price: 4,30€ the skewer, 8,50€ the half portion and 15€ the whole omelette. There are two versions in addition to the original: without onion and paisana (with bacon and chorizo), also outstanding.
