
They are not fine, they are not healthy, but you have to try them. Torreznos are a strip of bacon that, skin included, is fried or sautéed in a frying pan or grill to make it crispy. So Castilian, so popular, so simple that even UNESCO has recognized them as gastronomic heritage of humanity, a distinction that rarely has a specific dish, as it is usually given to gastronomies in general. An example of how intricate they are in gastronomy and how old they are is that a clear reference to them is made in the Lazarillo de Tormes.
1. The Torreznos
Torreznos had to start this list for obviousness and good work. Few dishes here omit the protagonist that gives the restaurant its name: there are the classics, with broken eggs, with potatoes revolconas, or in tacos with pico de gallo. The torreznos make here a little bit of fried potatoes, they always accompany, they are never left over.
They have been serving them since 1956, when José Luis Blázquez came to Madrid from his village in Ávila, where they are typical.

2. Treze
One of the essential restaurants in the Salamanca neighborhood is Treze. Some people discovered it thanks to its menu of the day -which they now serve in Terzio- and kept going for its well-executed classic dishes. On their website they explain that after more than a decade they have been readjusting their menu, but they do not touch the dishes that work, the torrezno is a clear example of this. They embroider the stews and marinades, but they know how to give the exact crispy touch to the torrezno that only needs good product and the right point of heat and salt.

3. Roostiq
The proof that the torrezno is eternal is that it has been in trend for 5 centuries and restaurants as fashionable as Roostiq have it on the menu and embroider it. The grill is the forte of this restaurant whose pizzas were made famous by Dabiz Muñoz thanks to an article in El Español, although in reality its specialty is the dish that concerns us here.
To bring it closer to its finest version, they propose in their social networks that you accompany it with champagne, as if this dish had been born north of the Pyrenees. Maybe if it had, it would be known worldwide as a delicacy.

4. Lakasa
Lakasa’s menu changes with the seasons and adapts to what the market has to offer, so that’s why its dishes from November include calçots, while in summer they go for tuna. But they always serve a dish that knows no season: torreznos. They usually serve it in a small dish accompanied with artichokes, almost like a starter or a tapa.
Chef Cesar Martin is at the helm of this restaurant that keeps in a balance in which the product is excellent, but the average price is not prohibitive.

5. El 5 de Tirso
Having a drink in Tirso de Molina square among the flower stalls and the diversity of the beginning of Lavapiés is almost a classic of Madrid’s terraces. El 5 de Tirso is the La Fabrica group’s bet for a tavern with twist, with two levels where you can order some torreznos to go with your beer.
In addition, from Monday to Friday, from 1pm to 4pm, they have a menu of the day with 10 starters to choose from, 10 main courses, drink, bread and dessert. And if you still can’t decide, there is always a dish of the day waiting for the undecided.

6. Taberna El Tentadero
At Tarberna El Tender they officially prepare the Best Torrezno of the Community of Madrid in 2025. Their torreznos stand out for a very crispy crust that envelops a mellow lean, achieving the perfect balance between texture and flavor. The maxim of good product extends to the rest of its menu with dishes such as artichoke carbonara with Iberian jowl or tomato salad.

7. El Quillo de Getafe
El Quillo was founded by young Carlos Chávez, Yaiza Plata and Aarón Pérez in Getafe and has gained recognition for its innovative preparation of traditional dishes, especially its torreznos and cachopos.
The restaurant won the title of Best Torrezno of the Community of Madrid in 2024, earning the right to represent the region in the final of the World’s Best Torrezno Contest. Its success is due to a unique technique of elaboration that combines two types of cooking, resulting in a torrezno with a perfectly crispy and juicy texture
