Last night, The World’s 50 Best Restaurants 2024 awards gala was held in Las Vegas, the list that each year unveils the most prestigious restaurants in the world. The winners of this edition -three of them new restaurants that debut in the ranking- have been distributed among 26 territories of the five continents and of all of them only one is from Madrid.
The impression produced by knowing its name is rooted more in coherence than in surprise: the award has been won by the only restaurant in Madrid that counts on its curriculum vitae with three Michelin Stars and at the head of which is the man who has been recognized on several occasions as the best chef in the world. We are talking, of course, about Dabiz Muñoz and his flagship: DiverXO.
The World’s 50 Best Restaurants defines him in a few words as “Hedonist. Creative. Unpredictable. […] More than a restaurant, DiverXO is an easel for the chef’s creativity, taking diners on the journey of a lifetime”.
what does The World’s 50 Best Restaurants say about DiverXO’s food?
DiverXO’s gastronomic proposal -specifically, DiverXO’s tasting menu– have been referred to as “various dishes of pure theater” that can include “everything from squab and sherry to multi-flavored mochi.”
And the Asian-influenced combinations of his cuisine stand out, such as nigiri matured in the Pyrenees, Japanese paella or roasted caviar with vindaloo curry and Greek yogurt.
The reopening of DiverXO
On this occasion, Muñoz has achieved a not inconsiderable fourth place with DiverXO, but the chef has big plans for what is his gastronomic project of reference: the reopening of this restaurant in 2025 with which he aspires to make it, in his words, “the best restaurant in the world”.
It will be a matter of time to see if these statements by the chef also become the headline of a future edition of The World’s 50 Best Restaurants.
