From the Michelin Guide we could say that it fulfills the function of a lighthouse: at the end of the day, and in a cursory manner, it sheds a light to guide us. The difference is that, in this case, instead of pointing the way to navigators it does so to anyone in search of a good culinary discovery. This is not insignificant, considering the very wide range of gastronomic offers of Madrid.
Although it is mostly known for the highest recognition it awards – the famous Michelin Stars, synonymous with a considerable financial outlay except for the exceptions-also awards other distinctions such as the Michelin Verde Stars -which recognize a kitchen’s commitment to sustainability – or the Bib Gourmand which rewards the restaurants with the best quality-price ratio.
But it also recommends inexpensive restaurants that deserve a mention in the guide. These are accompanied by the nomenclature “€ – Without giving up anything” -which translated into figures, means that the average price of a full meal (without drink) is below 35€- and in the case of Madrid are three: Arallo Taberna, Taberna Úbeda and Nantes.
