At Hot Now their starters are as essential as their pizzas. The best pizza of 2022 is made here so it is logical that it tops the list. The most surprising and the one that, at the same time, could arouse less expectations, is the pistachio pesto pizza , zucchini, tomato confit, panko and fresh lime zest. Of their starters, unusual in a pizzeria, such as hummus, guacamole or shrimp tiradito, you have to try them all.

2. Fratelli Figurato
Fratelli Figurato are two Neapolitan brothers who started with a tiny shop in Chamberí and that’s three. Its pumpkin and bacon pizza with a 5-grain base, roasted pumpkin cream, provola and walnut pieces will win over even the most experienced connoisseurs of transalpine gastronomy. Now, some say that their pizzas are among the fifty best in Europe and has a special mention in the 2022 Best Pizza in Spain contest for its Salsicia pizza.

3. Piccola Napoli
Also owned by Neapolitans, this family restaurant has changed location three times on the same street because they have outgrown it time and time again. It is better to order the medium than the individual if there is a good serve. Two pizzas stand out on the menu: the Piccola Napoli and the gorgonzola with walnuts. They also have menu of the day.

4. Mo of Movement
The wood-fired oven at the ticket already warns you that, at the very least, the smell will whet your appetite, and indeed, Mo de Movimiento’s pizzas confirm all the good omens. Pizzi&Dixie is the first vegan Italian restaurant in Madrid, and whether animals are part of your diet or not you have to try it. Perhaps most impressive are their purple potato gnocchi and yes, their vegan pizza has vegan cheese made by themselves.

7. Premiata Fornería Ballaró
If you are looking for a truly Italianflavor your place is at Premiata Fornería Ballaró, one of the most authentic Italian trattorias in Madrid. It could not be otherwise, being located in what is known as little Italy in Chamberí and taking into account that the mind and hands behind these pizzas are those of the Sicilian chef Angelo Marino. They are cooked in a wood-fired oven and the most famous are Margherita, Diavola, Truffle and Porchetta.

9. Grosso Napoletano
Grosso Napoletano está también en la lista de las 50 pizzerías del mundo y en 2023 fue nombrada la Mejor Cadena de Pizza Artesanal del Mundo. Entre sus pizzas se pueden encontrar la Ofelia Tartufona, con base bianca de mozzarella fiordilatte, mortadella tartufata di Bologna, crema di Grana Padano (16 mesi), lascas de parmesano y albahaca; o la Grosso, con base de tomate San Marzano, prosciutto cotto, salame napoletano, alcachofas, olivas leccino, mozzarella fiordilatte y albahaca.

Las pizzas de Pizza Posta son la versión argentina de la receta italiana. Tienen la masa de una focaccia —con dos días de fermentación— y van bien cargadas, son contundentes y vegetarianas, perfectas para compartir. La pizzería es pequeña y la cocina está abierta, así que eres testigo de la elaboración.

11. That’s Amore
En That’s Amore sirven una pizza con chorizo picante de la que es difícil olvidarse y antes puedes tomar una Provoletta alla pizzaiola, que nada tiene que ver con el provolone de supermercado o de restaurante italiano de postín. La Provoletta es mucho más lechosa —menos chiclosa, por lo tanto— y le acompañan tomatitos del piennolo que le dan un equilibrio perfecto al plato.

12. Restaurante Emma y Julia
Es bastante agradable reparar en que es sardo el origen de esta adorable familia que regenta un auténtico clásico entre los italianos madrileños. Es agradable, decimos, porque el respeto de los sardos a su comida, a su materia prima y a la norma es casi legendario en Italia. Emma y Julia (no ellas, que también, sino el restaurante) lleva décadas dando lo mejor de sí en La Latina. Y ahora también lo hacen a domicilio. En este artículo entran porque hablamos de pizzas, pero podría entrar en otro relativo a los best Italians. Wonderful.

The famous cliché that relates going to a restaurant with traveling to a country works wonderfully in Bel Mondo. The terrace reproduces the aesthetics of a Roman trattoria, the main dining room looks like a Lombard palace, a very high percentage (if not all) of the equipment comes from Italy, and the food, of course, is as dogmatically Italian as an Italian restaurant in Italy demands.

14. La Pizzeria
La Pizzeria triumphs with its light pizzas, with a tomato sauce of perfect acidity, made in the oven; it is also worth mentioning its homemade and handmade pastas (special attention to the gnnocchi with veal ragu). His menu is like the name of this business: concise. In the list of pizzas there are none with more than eight ingredients, very typical of the gastronomic origins they claim.

15. Del Poble Pizzeria
Del Poble Pizzeria was born in 2015 in a garage and the concept is that it moves away from the traditional Italian pizza to approach the Valencian (yes, Valencian). It is not a coca either, a baked dough with stuff on top that has nothing to envy to pizza. In this pizzeria, which already has 4 locations in Madrid, the doughs are thin and crunchy, but are well loaded with ingredients.

16. Baldoria
At the helm of Baldoria’s kitchen is a former Bel Mondo, Ciro Critiano, and in their first year of opening they have made it onto the 2023 list of Europe’s 50 best pizzerias and onto the podium of the I Pizza Championship of Spain. The Te Amo! pumpkin is the big winner of the menu thanks to the mixture of the sweetness of the pumpkin with the spicy ‘nduja and the touch of ricotta.

17. Roostiq
Roostiq is much more than just pizzas, it’s true, but the fact that they are Dabiz Muñoz’s favorite and that they were on the list of the best pizzas of the year is not surprising europe’s 50 best in 2021 makes them attractive to say the least. Almost anything that touches their coals is worthy of mention, in fact they specialize in meats, but if you have a hole left, make it to the torreznos.

18. Gustazio Gastrobar
At Gustazio they make Pinsa romana, the ancient recipe for today’s pizza. One of the virtues of this recipe is that it is less heavy to digest thanks to the long fermentation and lightness of the dough. This poor flour dough has been maintained over time, becoming a typical specialty in the ancient port of Ostia, until today, in a more modern key, Gustazio.

19. Can Pizza
The best pizza in Spain in 2023 was that of Can Pizza, a Catalan pizzeria that has an outlet in Madrid. The award-winning Pulp Edition is made with a base of dough fermented for 72 hours, to which is added sobrasada, Kalamata olive, octopus, Fior di Latte mozzarella, rosemary, thyme, pepper, oregano and fennel.
