At Hot Now their starters are as essential as their pizzas. The best pizza of 2022 is made here, so it is logical that it tops the list. Fratelli Figurato are two Neapolitan brothers who started with a tiny place in Chamberí, and now they have three (plus a laboratory with take away service). Their pumpkin and bacon pizza with a base of 5 cereals, roasted pumpkin cream, provola and pieces of walnuts conquers even the most connoisseurs of transalpine gastronomy. Now, there are those who determine that their pizzas are among the fifty best in Europe, and has a special mention in the Best Pizza of Spain contest in 2022 for its pizza Salsicia.

3. Piccola Napoli
Also owned by Neapolitans, this family restaurant has changed premises three times on the same street because it has been outgrown time and time again. It is better to order the medium size than the individual one if there is good service. Two pizzas stand out in their menu: the Piccola Napoli and the one with gorgonzola and walnuts. They also have a menu of the day.

4. Mo de Movimiento

Grosso Napoletano is also on the list of the 50 pizzerias in the world, and in 2023 was named the Best Artisan Pizza Chain in the World. Among its pizzas you can find the Ofelia Tartufona, with a white base of mozzarella fiordilatte, mortadella tartufata di Bologna, crema di Grana Padano (16 mesi), parmesan flakes and basil; or the Grosso, with a base of San Marzano tomato, prosciutto cotto, salame napoletano, artichokes, leccino olives, mozzarella fiordilatte and basil.

Pizza Posta pizzas are the Argentine version of the Italian recipe. They have the dough of a focaccia -withtwo days of fermentation- and are well loaded, hearty and vegetarian, perfect for sharing. The pizzeria is small and the kitchen is open, so you witness the elaboration.

10. That’s Amore
At That’s Amore they serve a pizza with spicy chorizo that is hard to forget, and before that you can have a Provoletta alla pizzaiola, which has nothing to do with the provolone of a supermarket or a fancy Italian restaurant. The Provoletta is much more milky -less chewy, therefore- and is accompanied by piennolo tomatoes that give a perfect balance to the dish.

11. Restaurant Emma and Julia
It is quite pleasant to realize that the origin of this adorable family is Sardinian, which runs an authentic classic among the Italians in Madrid. It is pleasant, we say, because the respect of the Sardinians to their food, to their raw material and to the norm is almost legendary in Italy. Emma and Julia (not them, but the restaurant) have been giving their best in La Latina for decades. And now they also do it at home. They are included in this article because we are talking about pizzas, but they could be included in another article about the best Italians. Wonderful.

The famous cliché that relates going to a restaurant with traveling to a country works wonderfully in Bel Mondo. 13. La Pizzeria
La Pizzeria triumphs with its light pizzas, with a tomato sauce of perfect acidity, made in the oven; it is also worth mentioning its homemade and handmade pastas (special attention to the gnnocchi with veal ragu). Their menu is like the name of this business: concise. In the list of pizzas there are none with more than eight ingredients, very typical of the gastronomic origins they claim.

14. Del Poble Pizzeria
Del Poble Pizzeria was born in 2015 in a garage, and the concept is that it moves away from the traditional Italian pizza to approach the Valencian (yes, Valencian). It is not a coca either, a baked dough with things on top that has nothing to envy to pizza. In this pizzeria, which already has 4 locations in Madrid, the doughs are thin and crispy, but are well loaded with ingredients.

15. Baldoria
At the helm of Baldoria’s stoves is a former Bel Mondo, Ciro Critiano, and in their first year of opening they have made the 2023 list of Europe’s 50 best pizzerias and the podium of the I Campeonato de Pizzas de España. The Calabaza ti amo! is the big winner of the menu thanks to the mixture of sweet pumpkin with the spicy ‘nduja and a touch of ricotta.

16. Roostiq
Roostiq is much more than pizzas, it is true, but the fact that they are Dabiz Muñoz’s favorite and that they were on the list of the 50 best in Europe in 2021 makes them at least attractive. Almost anything that touches their coals is worthy of mention, in fact they specialize in meats, but if you have a hole left make it for the torreznos.

17. Gustazio Gastrobar
At Gustazio they make Pinsa romana, the ancient recipe for today’s pizza. One of the virtues of this recipe is that it is less heavy to digest thanks to the long fermentation and lightness of the dough. This poor flour dough has been maintained over time, becoming a typical specialty in the ancient port of Ostia, until today, in a more modern key, at Gustazio.

18. Can Pizza
The best pizza in Spain in 2023 was that of Can Pizza, a Catalan pizzeria with a location in Madrid. The award-winning Pulp Edition is made with a base of dough fermented for 72 hours, to which is added sobrasada, Kalamata olive, octopus, Fior di Latte mozzarella, rosemary, thyme, pepper, oregano and fennel.
